I have claim language that looks like this: "...communicating information x,y, and z to a console, said console possibly recording said information x, y and z on a computer-readable medium ..."

In other words, it might write it down, and it might not. Do I need to say for sure? Must I make a dependent claim if I want to leave it open?

Possibly - no. Optionally - yes. Using a dependent claim - better. Think about how the feature helps overcome prior art and how it effects a person who plans to get around the claim. –  George White Jan 15 at 4:20
